  • For juicier ribeye steaks, allow them to stand for five (5) minutes before serving.

Well, there's a reason for this discrepancy -- prime rib cooking times depend a lot on the cooking temperature and the size of the roast.

There are two basic methods for cooking prime rib roasts -- high temperature and low temperature. Each method has its advantages and there are people who swear by a one cooking process or the other. Prime rib cooking times are mostly determined by whether you are cooking the meat at high temperatures or low temperatures.

Some people love the slow cooking methods that is used in smoker barbecues. It can't be denied that smoking brings out wonderful flavors in the prime rib and produces some of the juiciest roasts imaginable. The low temperature of smoker barbecues means that prime rib cooking times can be extended to five or six hours.

On the other hand, there are those who swear by cooking the prime rib in a hot oven. This method reduces prime rib cooking times to the minimum while searing the exterior of the meat so that it contains the juices. When placed in a 500° oven, a 12 pound roast will cook in less than an hour.

This fast cooking method, however, depends on the roast staying in the warm oven for at least one more hour after the heat is turned off. During this time, the meat is still cooking, so you could say that this method requires prime rib cooking times of three hours.

No matter which way you cook the meat, you have to check the interior temperature to make sure that it is cooked all the way through. A good-quality meat thermometer will tell you the temperature of the roast and you might have to extend the prime rib cooking times by an hour or two.

What you will need:

  • 4 filet mignon steaks, 4 oz each
  • 4 tablespoons (half a stick) chilled butter

  • 1/3 cup chopped shallots
  • 2/3 cup Cabernet Sauvignon or similar red wine

How to make it:

Melt a tablespoon of the butter in a skillet over a moderately high heat. Sprinkle salt and pepper over both sides of the meat, then pan fry them. The steaks will need about four minutes per side for medium.

Put each one on a plate covered loosely with aluminum foil. Melt another tablespoon of butter in the skillet and saute the shallots for a minute. Add the capers, mustard and wine and simmer the sauce for two minutes or until it thickens a bit.

Stir in the parsley and turn the heat down to moderately low. Whisk in the rest of the butter, and then add salt and pepper to the sauce to season it. Spoon it over the meat and serve.

1. The Ribeye. A juicy, tender flavorful cut. there is generous marbling through out, and is a crowd pleaser. This cut, when left on the bone is what is known as the "prime rib" at most restaurants.

2. The Tenderloin. As the name suggests, this is the most tender of the cuts. Also known as the "Filet Mignon", it truly does melt in your mouth.

3. Flat Iron. Now here is a unknown secret, and probably is the second most tender of all the choices. A low budget choice that takes a good steak rub well.

4. Top Sirloin. Excellent choice for kabobs.

5. Tri-Tip. Flavorful, juicy and perfect for marinades. Slice it thin after preparing and the flavor bursts in your mouth.

6. Flank Steak. The perfect choice for "teriyaki". Marinate, grill, slice thin on an angle...they will be asking for more.

7. Porterhouse. Also known as the T-Bone, because the bone forms a "T" where the shell steak and the tenderloin flank each other. This is the "powerhouse" of all steaks. A man's meal.

8. Last, but not least The Strip Steak. My favorite of them all. I grill this year round. It is also known as the NY Strip, Top Loin Strip, Kansas City Strip. The steak has real character, flavor and is by far fabulous on the grill.

Beef is graded in three most common categories:

1) Select, the lowest grade...not much flavor, tougher to chew.

3) Prime...clearly a cut above. Lots of marbling, loaded with flavor, my favorite selection when I am cooking or ordering at a restaurant a Strip Steak or a T Bone.

All other cuts you can stick with choice, and personally i stay away from select, as it is not worth the calories.

An Easy Filipino Dish - Bistek

Several Filipino dishes are very easy to make because they usually involve very few, but potent, ingredients that are slow-cooked into a sort of stew which is then poured over a generous helping of rice.

A really good example of this type of dish is a dish called Bistek. This dish is a very simple, but very highly flavorful dish that, like a lot of Filipino dishes, would be considered too strong to eat without rice. To make Bistek, one only needs four very simple ingredients: thin cut beef steaks, soy sauce, onions, and ground black pepper. Measuring spoons are optional because it is very hard to really make this dish wrong.

All one has to do is cut their steak into approximately 4X4 inch size pieces and place them into a small pot. Then, one would pour soy sauce until half the meat is doused. The next step would be to pour water until all the meat is fully covered. Once this is done, the cook needs to bring the meat to a boil and then down to a simmer under a lid for about 20 minutes. At this time, onion can be cut into strips. After the twenty minutes are up, the onion can be thrown into the pot and the stew will need to continue simmering until the sauce is reduced by half (or more if one so desires). Pepper, to taste, can be added at anytime during this process.

Before you know it, you have put together a very authentic Filipino dish called Bistek. However, the dish should be eaten over a generous helping of rice as the flavor is quite strong by itself. Enjoy!

If you are a meat lover, but also a cheese lover, then you have found a recipe that mixes your two loves in one. It is a very simple recipe and you can have it done anytime you want. You don't need to do much, just make sure all the ingredients are already in your kitchen and start cooking.

You will need:

The directions are very simple; first preheat the oven to 350º degrees Fahrenheit or 175º C. Then take a shallow dish and in here stir the flour, salt and pepper. Mix them well. Now in a separate bowl mix together the eggs, water and flour, also the salt and pepper, finally take a third bowl and mix the cracker crumbs and 1/3 of the Parmesan cheese and also add the basil. Now take a large skillet to heat the oil in and meanwhile add the steaks to the seasoned flour dip them in the egg mixture and then coat with the cracker crumb mixture. Finally place them in the skillet and fry them until the turn brown on each since. For arrangements present the steaks in a single layer casserole dish. Now that you have placed them here bake them for about 25 minutes in the preheat oven, this will allow he mozzarella cheese and the remaining Parmesan cheese to melt and for a better taste add oregano over them and you know they are done once the cheese is melted.

Ruby Tuesday Turkey Burger
1 tablespoon garlic powder
1 tablespoon red pepper flakes
1 teaspoon dried minced onion (optional)
1 egg
1/2 cup crushed cheese flavored crackers

Preheat a grill for high heat.

In a large bowl, mix together the ground turkey, garlic powder, red pepper flakes, minced onion, egg and crackers using your hands. Form into four fat patties.

Place patties on the grill, and cook for about 5 minutes per side, until well done.

Ruby Tuesday Crab Cakes
1 lb. crab meat
1 egg, beaten
1/2 cup Saltines, crushed
1/3 cup fresh parsley, minced
2 tablespoons mayonnaise
1/2 teaspoon paprika or Old Bay seasoning
cayenne pepper or Morton's Hot Salt
onion powder for sprinkling
butter or olive oil for frying

Remove any shell from crab. In a medium bowl, toss together crushed Saltine cracker crumbs, egg, parsley and mayonnaise until moistened, but do not over mix. Add salt and pepper.

Form into five or six cakes, 1/2 to 3/4 inches thick. Place in refrigerator on cookie sheet for at least one hour so they will set up. Sprinkle lightly with cayenne or Morton's Hot Salt and onion powder.

In a heavy skillet, fry crab cakes in butter (or olive oil), turning once until both sides are nicely browned (about 10 minutes).

Ruby Tuesday Broccoli Salad
1/3 cup hot water
4 tlbs. sugar
4 tlb. vinegar
1 cup mayo
2 heads broccoli cut into small pieces
16oz sharp cheddar cheese cut up
2 lbs bacon cooked crisp and crumbled
1 medium red onion minced

Put broccoli in a bowl.
Dissolve sugar in hot water.
Pour over broccoli
Add remaining ingredients mix well, refrigerate for a couple hours
