One of the best things about marinated steak recipes is that you can choose from literally hundreds of different recipes and even adapt those to your taste. Also, you can mix and match your steaks with the marinades. There are some marinades that are better for certain cuts of steak though.

If you are using a cheap, tough cut of steak you might want to use a marinade with plenty of citrus juice in it, or similar, because this will tenderize the steak. If you are using such a marinade on a more tender cut of steak you will need to be careful not to leave the marinade on for too long because it can make the meat mushy.

For steak:
3 pounds ground beef
3/4 sleeve of saltine crackers, crushed
1/2 cup milk
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder
1/2 teaspoon ground black pepper
1/4 teaspoon salt
Flour for coating steak
1 tablespoon vegetable oil

Ground Beef Steak and Potatoes Slow Cooker Recipe

For Gravy:
1/3 cup all-purpose flour
3 bouillon cubes
1/2 teaspoon salt
1/2 teaspoon pepper
1 1/2 cups water
1/2 cup milk

5 or 6 potatoes, thickly sliced or cut into eighths

DIRECTIONS

1. In a large bowl, mix together the ground beef, saltine crackers, garlic powder, onion powder, salt, pepper, and milk. Mix until well blended. Shape into round patties or ovals and set aside.
2. Grease the bottom of the slow cooker and put in potatoes.
3. Dissolve the bouillon cubes in the water. Put flour, salt and pepper in a separate bowl. Add small amounts of water at a time, mixing continuously. Add milk and mix well to prevent any lumps from forming. Pour over potatoes in crock pot or slow cooker.
4. Dredge both sides of each beef patty in flour.
5. Heat oil in a large skillet over medium heat. Brown beef patties on each side, turning once. Place patties on top of potatoes in cooker.
6. Place lid on cooker and cook on low setting for 4 to 5 hours. On high setting, cook for 2 to 3 hours.

Chengdu Chicken - An Authentic Chinese Chicken Recipe

This Szechuan dish is named after Chengdu, which is the capital of China's Szechuan province. This recipe serves three people as an entree or six if you are serving another dish with it. The hot bean paste gives the dish plenty of flavor. This ingredient is made with crushed chilies and soy beans.

Szechuan cuisine is famed for its bold flavors. Garlic, Szechuan peppercorns, and chilies are widely used in recipes from this recipe and ginger, sesame paste and peanuts also feature in a lot of recipes. As well as Chengdu recipes, there are Chongquig recipes, Zigong ones and Buddhist vegetarian food from the Szechuan region. The word is sometimes spelt Szechwan or Sichuan.

What you will need:

Chengdu Chicken - An Authentic Chinese Chicken Recipe

  • 1 lb boneless, skinless chicken breasts
  • 1/2 bunch spinach
  • 1 green onion
  • 5 tablespoons vegetable oil
  • 1 teaspoon Szechuan pepper or coriander
  • 1/2 teaspoon sesame oil
  • 2 slices ginger
  • 1 tablespoon hot bean paste
  • 1 clove garlic
  • Salt, as needed

For the marinade:

  • 1 tablespoon dry sherry or rice wine
  • 3 teaspoons cornstarch
  • 1/4 teaspoon sesame oil
  • 1 tablespoon soy sauce
  • 1/8 teaspoon black pepper

For the sauce:

  • 1 tablespoon soy sauce
  • 1 1/2 teaspoons cornstarch mixed with 2 tablespoons water
  • 1 tablespoon dry sherry or rice wine
  • 2 teaspoons red rice vinegar or red wine vinegar
  • 1 teaspoon white sugar

How to make it:

Wash the chicken and pat it dry on paper towels. Discard any fat. Cut the meat into strips and then cut the strips into one inch cubes. Combine the sherry or rice wine, sesame oil, soy sauce and black pepper to make the marinade, and then stir in the cornstarch. Marinate the meat in this mixture for twenty minutes in the refrigerator.

Combine the vinegar, soy sauce, rice wine or sherry and sugar to make the sauce. Dissolve the cornstarch in the water in another bowl. Smash and peel the garlic. Chop the ginger and garlic. Wash the green onion and chop it finely. Wash the spinach and drain it.

Heat the wok, and then add a tablespoon of the oil. Add the spinach and some salt. Wilt the spinach for a few seconds, and then remove it from the wok. Clean out the wok and add four tablespoons of oil to it. Add the chicken and fry it, stirring all the time. When it is almost cooked, take it out of the wok, leaving two tablespoons of oil in there. Add the hot bean paste, garlic, and ginger and fry for half a minute. Put the chicken back in the wok and stir the mixture.

Push the meat up the wok sides and add the sauce to the center. Stir the cornstarch mixture again and mix it into the sauce, stirring it fast so it thickens. Stir the chicken into the sauce and add the sesame oil and green onion. Sprinkle the Szechuan pepper or coriander over the top and serve it with the wilted spinach and perhaps some rice or egg noodles.

Texas Chicken Fried Steak Recipe With Classic White Cream Gravy

Chicken-fried steak is home-cooked Texas food at its best. Brought to us by the cowboys on the plains of Texas, this dish has evolved into a classic dish that all Texans and non-Texans alike will sure to love. Although there are many variations of this classic Texas dish, the recipe below results in a perfectly spicy, crispy crust. Of course, no chicken fried steak is complete without white cream gravy, so a classic recipe for that is also included below.

Chicken Fried Steak

Ingredients:
1 3/4 to 3 pounds round steak, sliced 1/2 inch thick, and then tenderized (cube steak).
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon ground black pepper
1 teaspoon baking soda
3/4 teaspoon salt
1 tablespoon hot pepper sauce
1 1/2 cups buttermilk
1 egg
2 garlic cloves, minced
vegetable shortening or oil for frying

Texas Chicken Fried Steak Recipe With Classic White Cream Gravy

Directions:
Cut the steak into 4 equal portions. If not already tenderized, pound the round steak portions until they are about 1/4 inch thick.

Place the flour in a shallow bowl or dish. In another dish, stir together the baking powder, baking soda, salt, and pepper. Mix in the buttermilk, egg, hot pepper sauce, and garlic. The mixture will be thin.

Dredge each cut of steak first into the flour and then into the batter. Dunk the steaks back into the flour and pat in the flour until the surface of the meat is dry.

Add enough oil into a deep cast-iron dutch oven or skillet to at least 4 inches of fat. Bring the temperature of the grease up to 350 degrees Fahrenheit. Fry the steaks for 7 to 8 minutes, pushing them down into the oil when they begin to float, and flipping them once, until they are a nice golden brown on both sides. Drain the steaks and place them on a platter, keeping them warm while you prepare the white cream gravy (below).

Chicken fried steaks are traditionally served with mash potatoes, with the cream gravy generously covering both.

Classic White Cream Gravy

Ingredients:
1/4 cup pan drippings (reserved from the chicken fried steak oil)
2 cups evaporated milk
1 cup beef stock
3 tablespoons all-purpose flour
1/2 teaspoon ground black pepper
salt to taste

Directions:
Place the skillet over medium heat and sprinkle in the flour, stirring to avoid lumps in the gravy. Pour in the evaporated milk and beef stock. Simmer until the liquid has thickened, about 3 minutes, stirring frequently. Add the pepper and salt to taste. The gravy should be quite peppery, so add more pepper if needed.

Seared Sesame Encrusted Ahi Tuna Steak Recipe

Tuna is truly an amazing food with a number of benefits that contribute to a healthy lifestyle. Tuna is rich in Omega-3 polyunsaturated fatty acids and has been known to reduce the risk of heart disease. It is also low in fat and cholesterol making it a great alternative to beef. Not only is tuna a powerhouse of nutrition, it is also one of the most delicious sources of lean protein that you will ever sink your teeth into.

Tuna is also easy to cook. Its a hardy fish and holds together well on the grill, in the oven, or on the stove top. The following recipe is one of my favorites and is fairly easy to prepare.

Seared Sesame Encrusted Ahi Tuna Steak Recipe

The thickness of the tuna steak you use really depends on how rare you like your tuna. Because you are only searing the outside of your tuna steak, it will not be in the pan for very long. So the thicker the steak, the more rare the center will be.

I personally do not like my tuna too rare, so I usually make this recipe with thinner cuts of tuna. This is just a preference, not a requirement. Many people, including chefs say the only way to eat tuna is rare. I guess you will have to be the judge.

Let us move on to the recipe shall we?

Seared Sesame Encrusted Ahi Tuna with a Cilantro, Garlic and Lime sauce..

I should mention one thing before we begin this recipe . I do not follow exact measurements in recipes. I measure everything by eye, so the following measurements are only to be used as a guide. So don't get too mad at me!

This is optional, but I like to toast the sesame seeds in a dry pan first before I put them on the tuna. The seeds become nutty and aromatic when you toast them. This is highly recommended if you have the time and is quite easy to do. Simply heat a dry pan over medium heat, then add the seeds shaking the pan occasionally. You may have to do this in batches, depending on how many seeds you are toasting. You do not want to overcrowd the pan. Keep an eye on the seeds and make sure they do not burn. Toast them until they darken a bit and start to become fragrant. Remove and let them cool before adding them to the tuna.

INGREDIENTS:

1/4 Cup Black Sesame Seeds
1/4 Cup White Sesame Seeds
1 Tablespoon of Sesame Oil
2 - 6 ounce Ahi (Yellow Fin) Tuna Steaks
Salt and Pepper to Taste

MARINADE/ DIPPING SAUCE

1/ 2 Cup of Low Sodium Soy Sauce (Who needs the extra sodium, right?)
1 Lime (Juice and Zest - If you want more lime flavor, add another)
1- 2 Cloves of Garlic Minced
2 Tablespoons of Honey
1 Tablespoon of Sesame Oil
2 Tablespoons of Freshly Chopped Cilantro Leaves

1) Prepare the marinade. Add all marinade ingredients to a small bowl and mix well. Reserve half of this marinade in a separate container to use as a dipping sauce.

2) Get a glass baking dish or other non-reactive container to marinade the tuna in. You want the tuna steaks to fit snuggly in the dish so that they are surrounded nicely with the marinade. Pour the marinade into the dish and put the tuna steaks in and kind of swirl the marinade around so that you coat the fish well. Cover with some plastic wrap and refrigerate. Another option is to pour the marinade in a large zip lock bag, add the tuna, and then squeeze out the air. Marinade for 30 minutes to an hour, turning the tuna about half way through.

3) Remove tuna from fridge and let stand at room temperature for about 20 minutes or so.

4) Remove tuna from marinade, shaking off any excess marinade and dry on paper towels.

5) Heat a saute pan over medium heat and add 1 tablespoon of sesame oil. The oil should be hot but not smoking.

6) While the pan is heating, arrange your sesame seeds on a flat dish. Roll the tuna around in the seeds pressing down as you roll ensuring the seeds are packed into the tuna nicely.

7) Add the tuna to the hot saute pan and shake it a bit to make sure the tuna does not stick. Sear for 30 to 40 seconds on both sides.

8) Remove and serve with the reserved dipping sauce.

For side dishes with this recipe I usually keep things pretty bland as I don't want anything to compete with the flavors in the tuna. So I usually prepare a side of steamed green beans with a bit of butter, salt and pepper or other vegetable along with some lightly seasoned jasmine or basmati rice.

Baked Steak and Potatoes in Tomato Sauce Recipe

This is a dish that my mother prepared for many years. It was my favorite meal, so she always made it for me on my birthday. It makes cheaper cuts of round steak come out very tender. I now cook this dish for my own family, but I still make sure I have it on my birthday in memory of my mom.

Mom's Baked Steak and Potatoes in Tomato Sauce

\" Recipe For Steak\"

1 1/2 to 2 pounds round steak, cut into serving sized pieces
4 large potatoes, peeled and quartered
3 cups tomato sauce
1 cup all-purpose flour
1 teaspoon salt, divided
1 teaspoon black pepper, divided
1 teaspoon oregano
1 tablespoon sugar
3 tablespoons vegetable oil

Baked Steak and Potatoes in Tomato Sauce Recipe

1. Preheat oven to 325 degrees F. In a medium bowl combine flour, 1/2 teaspoon salt and 1/2 teaspoon black pepper. Dredge both sides of steak pieces through flour mixture. Discard leftover flour.
2. Heat the vegetable oil in a large skillet over medium heat. Brown each side of the steak pieces in hot oil until lightly browned. Place steak in a 9x9 or 9x13 glass baking dish.
3. Place cut potato pieces in baking dish with the steak pieces.
4. In another medium bowl combine tomato sauce, 1/2 teaspoon salt, 1/2 teaspoon black pepper, oregano and sugar. Mix together well. Pour sauce evenly over steak and potato pieces in baking dish.
5. Cover dish tightly with aluminum foil. Place in preheated oven and bake covered for 45 minutes. Remove foil and continue to bake for another 30 minutes, or until potatoes show some signs of browning and steak is cooked through.
6. Serve with plenty of the tomato sauce over the steak and potatoes. Serves 5 or 6.

This dish makes a great Sunday dinner meal when served with green beans and hot rolls.

Steak Recipe - The Backyard Grill - An American Experience

Hey folks, it's time to fire up that grill! One of the most common activities in American recreation is grilling that nice, big, juicy steak in the backyard. Here is my favorite steak recipe, along with a great grilled side to accompany it:

Griff's American Grilled Black Pepper & Garlic Steak

\"steak Recipe\"

Ingredients:

4 lbs. (approximate) thick cut rib eye steak (four steaks)

2&2/3 cups Italian dressing (cheap is good!)

8 tbsp. butter

4 large cloves minced garlic

2 tbsp. freshly ground black pepper (or more, if you love black pepper!)

Instructions:

Marinate the steak in the Italian dressing for at least 1/2 hour. In a small pan, melt the butter and add the garlic, heating slowly until the garlic is golden brown. Place steaks on hot grill (preferably a charcoal grill), sprinkling half of the pepper on steaks. When the first side is done, turn the steaks over and sprinkle the rest of pepper on steaks. With a spoon, pour the butter and garlic mixture over the top of steaks while they are still on grill.

Griff's American Grilled Potato & Pepper Pouches

Ingredients:

3 cups unpeeled, sliced potatoes

2/3 cup green bell pepper (with membrane & seeds removed), diced

2/3 red bell pepper (with membrane & seeds removed), diced

2/3 orange bell pepper (with membrane & seeds removed), diced

2/3 cup onion, cut in long, diced

2 tbsp. jalapeno pepper (with membrane & seeds removed), finely chopped

2 large cloves minced garlic

1 tsp. Lawry's® seasoned pepper (or just black pepper)

1/2 tsp. salt

4 tbsp. butter

Instructions:

Combine everything except the butter in a large mixing bowl--really mix everything well. Cut 4 18" x 12" sheets of aluminum foil. Lay the foil flat (dull side up) and put 1/4 of the mixture on each sheet in a mound that is at the center of one end of the foil. Make sure there is space between the mound and all of the edges of the foil. Put 1 tablespoon of butter on the top of each mound. Fold the other end of the foil over the top of the mound and fold the side edges up over the top so that when you are done you have four neat pouches. Put the pouches (butter on top) on a very hot grill for about ten minutes, then flip over and grill another 10 minutes, or until potatoes are tender. Take off grill and allow to stand a few minutes, then empty each pouch on four dinner plates.

If you think that you have in a fancy restaurant to get a delicious and respectable meal, then you are very mistaken. You are going to be able to enjoy this easy recipe in your own house and then you can do it every time you want to. Remember to follow these steps closely and this way you can have it don many times.

Ingredients for this dish:

How to Cook this Dish:

The first basic step is to preheat and outdoor grill and prepare it for high heat, then take a small saucepan and melt the butter in it, all of this has to be done at medium-low heat and with garlic powder and minced garlic. After this take the mixture and place it aside. Now that you have this done sprinkle both sides of each steak with salt and pepper, remember that you can do this to taste. And after this has been done you have to grill the steak at least 4 to 5 minutes each side until they reach the desired consistence and then you can take them out. Remember they have to be well cooked, opaque in the center. Finally brush the steaks with a little garlic butter and then let the butter melt. This is it. You are done. Just serve them to your friends an they will end craving for more.

If you are a meat lover, but also a cheese lover, then you have found a recipe that mixes your two loves in one. It is a very simple recipe and you can have it done anytime you want. You don't need to do much, just make sure all the ingredients are already in your kitchen and start cooking.

You will need:

All purpose flour (3 tablespoons)

Salt (1/2 teaspoon)

Eggs (2)

Water (2 tablespoon)

Saltine crackers (1/3 cup crushed)

Parmesan Cheese (1/3 cup, grated)

Dried basil (1/2 teaspoon)

Vegetable oil (3 tablespoons)

Cube steaks (4 beef)

Tomato sauce (1 ¼ cups)

White sugar (2 ¼ teaspoons)

Oregano (1/2 teaspoon, divided)

Garlic powder (1/4 teaspoon)

Mozzarella cheese (4 slices)

How to do it:

The directions are very simple; first preheat the oven to 350º degrees Fahrenheit or 175º C. Then take a shallow dish and in here stir the flour, salt and pepper. Mix them well. Now in a separate bowl mix together the eggs, water and flour, also the salt and pepper, finally take a third bowl and mix the cracker crumbs and 1/3 of the Parmesan cheese and also add the basil. Now take a large skillet to heat the oil in and meanwhile add the steaks to the seasoned flour dip them in the egg mixture and then coat with the cracker crumb mixture. Finally place them in the skillet and fry them until the turn brown on each since. For arrangements present the steaks in a single layer casserole dish. Now that you have placed them here bake them for about 25 minutes in the preheat oven, this will allow he mozzarella cheese and the remaining Parmesan cheese to melt and for a better taste add oregano over them and you know they are done once the cheese is melted.

2 Cups beer
1/2 cup olive oil
1/2 cup vinegar
1 tablespoon minced garlic
1 teaspoon cayenne pepper
1 tablespoon horseradish
1 teaspoon chili powder
1/2 teaspoon salt
1 tablespoon lemon juice

Mix together all the above ingredients. For best results, marinade the steak overnight. You can also use the left over marinade to baste the steak while it is cooking if desired.

Sweet Steak Marinade Recipe

1/4 cup beer
2 tablespoons teriyaki sauce
2 tablespoons brown sugar
1 tablespoon lemon juice
1 medium yellow bell pepper, diced
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder

Mix the above ingredients. For best results, marinade the steak overnight. You can use the left over marinade to baste the steak while it is cooking.

Coca Cola Steak Marinade Recipe

For a twist, try this steak marinade that uses coca cola. You may be a little scared at first, but this actually tastes pretty good. This marinade goes best with flank steak.

1 quart Coca-Cola
2 cups olive oil
2 cups vinegar
4 cloves garlic
1/2 teaspoon salt
1/2 teaspoon black pepper

Combine the above ingredients and let the steak marinade for at least 6 hours.

An Easy, Quick Recipe - Baked Ham Steak With Pineapple

Baked Ham Steak with Pineapple

1 1/2 pound ham steak

1 can pineapple rings

brown sugar

cinnamon

1. Preheat the oven to 375 degrees F.

2. Trim off or slice through the fat on the edge of the ham in several places to prevent curling in the pan.

3. Place the ham steak in a shallow ovenproof pan and place the pineapple slices on top. Pour the pineapple juice over all.

4. Place the ham steak in the oven and bake for 20 minutes (uncovered).

5. After 20 minutes, remove the pan from the oven and turn the oven up to broil.

6. Baste the ham with the pan juices. Sprinkle a little brown sugar over the pineapple slices and dust with cinnamon.

7. Return to oven and broil for 3 to 5 minutes or until the pineapple is lightly browned. Serve each ham steak with a pineapple slice.

Tzatziki Recipe

Tzatziki can be used as an appetizer, or part of a meal. It is quite common in Greek cuisine. For example, it is often served in gyros. The majority of the food is made of strained yogurt. This can be purchased at some stores, and may be called Greek yogurt. Those who cannot find it or don't want to purchase it that way for some reason can attempt to strain regular yogurt, reducing it to (generally) one-half or one-third of the original amount. For a tzatziki recipe such as the one below, buying 6 cups of yogurt should be sufficient to end up with the 2 cups of the strained variety that are used to make the sauce. The straining process should continue for at least several hours -- 4 at the minimum. Depending upon the original consistency and other factors, this may be roughly enough time to get the volume down to about half. Straining overnight can allow it to become even thicker, which may be preferable to some people.

2 cups Greek/strained yogurt
3/4 cups diced cucumber
7 cloves of garlic, chopped into fine pieces
1 tbsp. olive oil
2 tsp. lemon juice
1 tsp. lemon zest
2 tbsp. chopped cilantro

Directions

Combine the olive oil and the lemon juice in a bowl, stirring well. Add in a yogurt at a relatively slow pace, making certain that it mixes in well. Finally, add in the remaining ingredients and continue to stir until the distribution of ingredients in the tzatziki is fairly even. Allow it to chill before being served.

Marinated, Grilled Chuck Steak Recipe

A couple of weeks ago, my wife Sue came home from one of our local
supermarkets with a couple of chuck steaks. A young guy in the meat
department had given her a pitch describing the virtues of chuck
steak and how flavorful it is. I had always considered chuck steak
to be inferior for grilling purposes, but I decided to challenge
myself: Could I take these chuck steaks and turn them into a good
presentation from the grill? Well, I passed the test with flying
colors. These steaks tasted great! I grilled these on George
Foreman electric grill, but you can prepare the steak on a large
cast iron frying pan as well. You'll find the flavor from the marinade to be very tasty and not overpowering. There are some fantastic layers of flavor going on.

Ingredients:

Steak Recipe

2 approx. 1" thick boneless chuck steaks (approx. 1.5 lbs. total)

For the marinade:

2/3 cup olive oil

1/3 cup red wine vinegar

1/3 cup soy sauce

2 tbsp. brown sugar

3 cloves minced garlic

1 tbsp. dried parsley leaves

1 tsp. coarsely ground black pepper

1 tsp. dried rosemary leaves

1 tsp. dried mint leaves

Put all marinade ingredients in a bowl, or a two-cup measuring cup,
and stir with a spoon until ingredients are thoroughly blended
together. Tenderize the meat by poking repeatedly with a fork.
Place steak and marinade in a large freezer bag. Coat the steak
well with the marinade. Seal the freezer bag and place in a bowl.
Chill in refrigerator and marinate the meat for at least 4 hours
and up to overnight. Grill steaks to preference.

Seared Sesame Encrusted Ahi Tuna Steak Recipe

Tuna is truly an amazing food with a number of benefits that contribute to a healthy lifestyle. Tuna is rich in Omega-3 polyunsaturated fatty acids and has been known to reduce the risk of heart disease. It is also low in fat and cholesterol making it a great alternative to beef. Not only is tuna a powerhouse of nutrition, it is also one of the most delicious sources of lean protein that you will ever sink your teeth into.

Tuna is also easy to cook. Its a hardy fish and holds together well on the grill, in the oven, or on the stove top. The following recipe is one of my favorites and is fairly easy to prepare.

I made this particular dish the other day and it was absolutely wonderful. My wife, who normally does not eat big portions, cleaned off her plate and wanted more, so that is a very good sign.

The thickness of the tuna steak you use really depends on how rare you like your tuna. Because you are only searing the outside of your tuna steak, it will not be in the pan for very long. So the thicker the steak, the more rare the center will be.

I personally do not like my tuna too rare, so I usually make this recipe with thinner cuts of tuna. This is just a preference, not a requirement. Many people, including chefs say the only way to eat tuna is rare. I guess you will have to be the judge.

Let us move on to the recipe shall we?

Seared Sesame Encrusted Ahi Tuna with a Cilantro, Garlic and Lime sauce..

I should mention one thing before we begin this recipe . I do not follow exact measurements in recipes. I measure everything by eye, so the following measurements are only to be used as a guide. So don't get too mad at me!

This is optional, but I like to toast the sesame seeds in a dry pan first before I put them on the tuna. The seeds become nutty and aromatic when you toast them. This is highly recommended if you have the time and is quite easy to do. Simply heat a dry pan over medium heat, then add the seeds shaking the pan occasionally. You may have to do this in batches, depending on how many seeds you are toasting. You do not want to overcrowd the pan. Keep an eye on the seeds and make sure they do not burn. Toast them until they darken a bit and start to become fragrant. Remove and let them cool before adding them to the tuna.

INGREDIENTS:

1/4 Cup Black Sesame Seeds
1/4 Cup White Sesame Seeds
1 Tablespoon of Sesame Oil
2 - 6 ounce Ahi (Yellow Fin) Tuna Steaks
Salt and Pepper to Taste

MARINADE/ DIPPING SAUCE

1/ 2 Cup of Low Sodium Soy Sauce (Who needs the extra sodium, right?)
1 Lime (Juice and Zest - If you want more lime flavor, add another)
1- 2 Cloves of Garlic Minced
2 Tablespoons of Honey
1 Tablespoon of Sesame Oil
2 Tablespoons of Freshly Chopped Cilantro Leaves

1) Prepare the marinade. Add all marinade ingredients to a small bowl and mix well. Reserve half of this marinade in a separate container to use as a dipping sauce.

2) Get a glass baking dish or other non-reactive container to marinade the tuna in. You want the tuna steaks to fit snuggly in the dish so that they are surrounded nicely with the marinade. Pour the marinade into the dish and put the tuna steaks in and kind of swirl the marinade around so that you coat the fish well. Cover with some plastic wrap and refrigerate. Another option is to pour the marinade in a large zip lock bag, add the tuna, and then squeeze out the air. Marinade for 30 minutes to an hour, turning the tuna about half way through.

3) Remove tuna from fridge and let stand at room temperature for about 20 minutes or so.

4) Remove tuna from marinade, shaking off any excess marinade and dry on paper towels.

5) Heat a saute pan over medium heat and add 1 tablespoon of sesame oil. The oil should be hot but not smoking.

6) While the pan is heating, arrange your sesame seeds on a flat dish. Roll the tuna around in the seeds pressing down as you roll ensuring the seeds are packed into the tuna nicely.

7) Add the tuna to the hot saute pan and shake it a bit to make sure the tuna does not stick. Sear for 30 to 40 seconds on both sides.

8) Remove and serve with the reserved dipping sauce.

For side dishes with this recipe I usually keep things pretty bland as I don't want anything to compete with the flavors in the tuna. So I usually prepare a side of steamed green beans with a bit of butter, salt and pepper or other vegetable along with some lightly seasoned jasmine or basmati rice.

This steak has a very tender flavor, it is very easy to make and you can have it prepared ahead to make it taste even better. And also you can accompany them with egg noodles or maybe chow mein. It is something that will make you enjoy high cuisine in your own home.

You will need:

Beef Sirloin (2 pounds, cut into 2 inches strips)

Garlic Powder (to taste)

Vegetable oil (3 tablespoons)

Beef bouillon (1 cube)

Onion (1/2 cup) chopped)

Large Ball peppers (roughly chopped)

Tomatoes (1 can or 14.5 ounce, with liquid)

Soy Sauce (3 tablespoons)

White sugar (1 teaspoon)

Salt (1 teaspoon)

How to do it:

Take the strips of sirloin and sprinkle them with garlic to taste, now take a large skillet and place it over medium heat and once you have this done add the vegetable oil and in here brown the seasoned beef strips, once you have seasoned them you can transfer them to a slow cooker and keel them here for a while. In the mean time take the bouillon and mix it with hot water until it has dissolved, once this has been done mix in the cornstarch until is has dissolved as well, and once this has been done pour it into the slow cooker with the meat you previously did, once this has been done add the onion, green peppers the tomatoes, soy sauce, sugar and salt. Once you have done this cover the mix and cook it in high temperature for 3 or 4 hours, or you can cook it in low temperature for 8 hours or 9 hours. And finally you will have finished.

Carne Asada Recipe - Simple and Easy

Have you ever visited a Mexican restaurant or a Taco Stand in your travels or in your local area? One thing that always stands out for me at these places, apart from the tremendous aroma, is the carne asada menu items. Typically what I see at a restaurant will be a burrito or chimichanga dish that uses this Mexican steak. More commonly, what I find at Taco Stands are the smaller hand-sized tacos. The following basic recipe shows you the ingredients that make for a great carne asada. Read on to see some other tips that can improve on this already delicious dish.

First off, pick up two to three pounds of skirt or flank steak. This steak is thin enough for a quick sear.

Build a base from the following ingredients:

  • 1/2 cup of cooking oil
  • 1/2 cup of soy sauce
  • 1/3 cup of white vinegar
  • 1/4 cup of fresh lime juice
  • 3 tablespoons of minced garlic

Add the following spices:

  • 1 tsp of chili powder
  • 1 tsp of dried oregano
  • 1 tsp of garlic powder
  • 1 tsp of salt
  • 1 tsp of pepper

Mix these ingredients up. Use your favorite marinade method and let it marinade at least an hour. I prefer keeping the meat in a bag, in the refrigerator, overnight. Another tip that pulls from the more authentic methods for creating this dish involves the use of additional citrus juices. Although most of us are more familiar with seeing limes or lemons complementing our favorite Mexican delicacies, I have learned that oranges are actually used a lot more during the carne asada preparation and grilling process. Try supplementing the lime juice with a half a cup of lemon juice and three quarters of a cup of orange juice.

For meat lovers who are struggling to give up high-energy density meat in the diet, or people who are deliberating to move toward vegetarian alternatives, a low-carbohydrate mushroom recipe is definitely something worth trying. Mushrooms are low in calories (1 full cup contains only about 45 calories), low in sodium, have virtually zero fat and cholesterol. No wonder why they complement so many meat dishes and why some even consider them as the meat-eaters vegetarian choice. Ingredients:

5 big leaves of lettuce
Brown mushrooms or portabello mushrooms, cut into broad strips
Sea salt to taste
A dash of black pepper
2 cloves of garlic, chopped fine
2 teaspoon of cooking oil
3 table spoons of balsamic vinegar
1 tablespoon of honey

Directions:

1. To prepare fresh mushrooms, first trim off any hard bottom on the stems and knock off any sticky bits of dirt with a damp kitchen towel. Then give them a quick wash under the tap, they don't really absorb as much water and turn mushy as what many people had warned.
2. Fry chopped garlic in oil till it's slightly brown.
3. Add mushrooms and continue to stir-fry until they become soft.
4. Turn off heat and add salt and pepper.
5. Cut lettuce into thin strips.
6. Put lettuce, mushrooms into a salad bowl and add honey and vinegar
7. Mix and enjoy!

Recipe to Try: Salisbury Steak With Mashed Potatoes

One of the most ordered dish in my catering business of 4 years is my own version of Salisbury Steak with Mashed Potatoes. What makes this dish so good is the wonderful creaminess of milk topped in the juicy and tender beef patties. It is so easy to prepare and takes up less of your time especially when you are preparing for a big crowd. Salisbury Steak is almost the same with Hamburger Steak but differs in ingredients. It is made of ground beef with gravy or brown sauce and served with mashed potatoes or noodles. It originated from the US but there are a lot of versions available in making this recipe. I made my own revisions and my customers simply love it!

Salisbury Steak with Mashed Potatoes

Steak Recipe

Ingredients:

1 kilo Ground Sirloin Beef

1/2 cup breadcrumbs

1 onion, finely chopped

2 eggs, lightly beaten

1 305-gram Cream of Mushroom soup

1/2 can Evaporated Milk

1/4 tsp liquid seasoning

1 cup sliced button mushroom (reserve the liquid)

2-4 tablespoons butter

Mashed Potatoes:

1/2 kilo of Potatoes, peeled, sliced into squares

1 stalk celery

1 can of all purpose cream

1/4 cup Butter

Salt and Ground Pepper

1. Prepare Mashed Potatoes first. After peeling and slicing the potatoes, boil it together with the celery until tender about 10-15 minutes. Mashed it thoroughly.

2. Mix the potatoes with cream, butter and season it with salt and pepper.

3. Put it aside in a serving platter while doing the steak.

4. In a mixing bowl, combine beef, breadcrumbs, onion and eggs. Mix well.

5. Shape the beef mixture into 10 patties. In a large skillet, melt butter and brown the patties 2 or 3 at a time at about 2 or 3 minutes on each side or until cooked to desired wellness. Make sure that you don't over crowd patties for it will shrink when being cooked. Place the cooked patties and arrange it beside the mashed potatoes.

6. In a saucepan, combine mushroom soup, milk, liquid seasoning, mushroom and reserved liquid. Heat and simmer until mixture is smooth, stirring it occasionally about 3 minutes. Pour the mushroom sauce on top of the patties.

7. Served hot.

This recipe taste so good that one would think it is difficult to make. Try it and you will see how wonderful it is to be able to do something so simple but can give so much delight to your family and friends.

Grilling with friends and family can be so much fun, and the tri-tip is a fantastic cut of meat to serve a large group of people. Grilling a tri-tip is cheaper than grilling individual steaks. A good-sized tri-tip can serve between five and six people.

If you live on the East Coast you may not be familiar with tri-tip. The tri-tip is a cut of meat from the bottom sirloin. Many times it is considered a roast, but it's real texture when grilled is much more like steak. And that is why on the West Coast you'll find it being served at many a BBQ.

There are many different ways to prepare a tri-tip for grilling. Consider marinating your tri-tip overnight to seal in its delicious flavor. You might also want to consider using a dry rub on your tri-tip just before you put it on the grill. One of the things I like to do when I BBQ a tri-tip is to start with a dry rub, and baste it with a delicious BBQ sauce about 10 minutes before pulling it off the grill. Grilling it like this will give the roast a nice crust while still maintaining that fantastic center flavor.

The best way to cook the tri-tip is to grill it over indirect heat at 325°. This style of cooking is called slow cooking. The time to cook it can vary from 60 to 90 minutes depending on the size of the tip. A good rule of thumb is to grill the tri-tip around 30 minutes for every pound.

The right way a tri-tip should be cooked is medium rare to medium. Pull the tri-tip off the grill when the center of it reaches 140°. Do not cover the tri-tip with aluminum foil as this'll turn the tri-tip gray, and you won't get that nice seared crust that a tri-tip should have.

An Easy Meatloaf Recipe For A Busy Cook

There are as many meatloaf recipes are there are cooks. This one is my favorite, an easy meatloaf recipe that can be varied to suit your tastes. Start with the basic recipe and add seasonings from the list below to suit your family. You can vary the meats used and the seasonings.

To keep my meatloaf recipe easy, I use ground beef. Many cooks use a combination of ground beef, ground pork or ground veal. Some use sausage in their mixture. If you desire a mixture of meats, use 1/2 to 3/4 pound of pork, veal or sausage to 1 pound of beef. Using the seasoned Italian style bread crumbs seasons the meatloaf, making this recipe easy and quick to prepare. I don't actually even measure anything. I just dump the ingredients together using a reasonable amount of each. If the mixture is too moist, add more bread crumbs. If too dry, add more ketchup. It really is an easy meatloaf recipe that is foolproof.

Steak Recipe

Basic Easy Meat Loaf Recipe

1 1/2 pounds ground chuck

3/4 cup Italian style bread crumbs

2 eggs

1 large onion, finely chopped

1 1/2 teaspoon salt

1/2 teaspoon pepper

1 teaspoon each garlic powder and onion powder, optional

1/4 cup catsup + more for top if desired

2 Tablespoons Worcestershire sauce, optional but good

1. Preheat oven to to 375 degrees F.

2. In a large loaf pan or ovenproof baking dish, mix all ingredients.

3. Shape into loaf shape.

4. Bake at 375 for 1 hour or until done.

5. I like to cover the top with more catsup during the last 20 minutes of baking.

You can try additional seasonings such as diced bell pepper, chopped celery leaves, minced parsley and thyme. If using sausage, try adding finely diced apple, and eliminate the garlic, onion powder and Worcestershire sauce. Small diced vegetables such as potato, carrots, or peas can be added if you like. Some cooks add chopped olives or chopped pickles or hard boiled eggs. You can substitute canned soup for the catsup, pouring more over the top as it bakes. The variations are endless.

If you are blessed with leftovers of this easy meatloaf recipe, this makes a delicious sandwich filling the next day, but don't count on it. My family eats this up.
